White chili is one of my favorite crockpot meals. I was given this recipe by my mother-in-law when my husband and I got married. When it starts to get cold outside we eat this almost once a week! You can serve this with corn tortilla chips and salsa. (I might or might not use tortilla chips as my spoon with this dish!)
One of my favorite parts of cooking is learning how each ingredient affects my body. I think it is easier to eat “healthier” when you know how the food you are eating is benefiting your body. Instead of focusing on the “good vs bad” food mentality, try learning the benefits of eating different foods! This is a great way to shift how you think about food.
White chili is packed full of protein from the chicken and fiber from the beans and veggies. It was originally made with chicken broth but I changed it to chicken bone broth for added anti-inflammatory and immune-supporting properties. This is a hearty meal that is just as nourishing as it is delicious!
Let’s Get Cookin
This is such a simple recipe that takes no time to prepare. The only thing you need is a crockpot. If you don’t have one what are you waiting for?! It makes cooking healthy meals so much easier on those busy days! We’ve had ours for years. I’ll link it here!
Start by spraying your crockpot with cooking oil. I like to use coconut oil spray. This helps everything not stick so cleanup is easier. Place your uncooked chicken breasts into the crockpot. You do have the option of cutting your chicken into bite-size pieces before putting it in the crockpot. I never do this because it takes more time to prepare and adds more dishes to wash. I prefer to shred the chicken after everything is cooked.
Drain and rinse the great northern beans. Once rinsed, dump beans into the crockpot. Next up, add in the green chilis, chopped onion, and bone broth. If you have fresh garlic on hand, chop some up and throw that in as well. Garlic has great anti-microbial and anti-inflammatory properties.
Once the main ingredients are added to the crockpot, move on to the spices. Cumin is what gives this chili its distinct flavor. Add in the cumin, oregano, cayenne pepper, and salt. Feel free to add more or less of the cayenne pepper depending on your taste. I will tell you though, the spicier the better!!
Stir everything together and place the lid on the crockpot. Cook on low for 8 hours or high for 6 hours.

Ingredients
- 2 lbs uncooked chicken breast
- 30 oz great northern beans (2 cans)
- 8 oz chopped green chilis (2 cans)
- 1/2 cup diced onion
- 3 cloves chopped garlic
- 24 oz chicken bone broth
- 2 tsp cumin
- 1 tsp oregano
- 1 1/2 tsp cayenne pepper
- 1/2 tsp salt
Instructions
- Spray crockpot with cooking spray.
- Place uncooked chicken breast into crock pot.
- Drain and rinse great northern beans.
- Add beans, green chilis, chopped onion, garlic, and bone broth to crock pot.
- Add cumin, oregano, cayenne pepper, and salt to crock pot.
- Stir everything together.
- Cook on low for 8 hours or high for 6 hours.
- Shredd chicken with fork before serving.
- Serve with salsa and tortilla chips.
