Saute onion, celery, and garlic until the onion is translucent. It should smell very fragrant.
Add in ground turkey, salt, and pepper.
Brown turkey until thoroughly cooked.
Add carrots and sautee for 2-3 minutes.
Add bone broth and water.
Bring everything to a boil.
Add noodles and kale. Stir everything together and bring back to a boil.
Cover pot and turn the heat down to a simmer.
Simmer for about 20 minutes. Noodles should be cooked through.
